Not much has changed as an adult. I don't necessarily go out of my way to get chocolate. And I only really enjoy dark chocolate. Personally, the darker the better.
Now that I know I have food sensitivities it makes a lot of sense to me why I didn't like chocolate as a child.
However...none of this stopped me from touring the South Bend Chocolate Factory. I really do enjoy discovering how things are made and the history of a place.
I got to hear how chocolate is harvested from the beginning of a cacoa pod, and the process it goes through to become various types of chocolate. Yes, I had to wear a hair net as I walked through.
One thing that I found quite interesting was that the cacoa nibs have been minimally processed and are have 0% milk. This makes a lot of sense as to why its not only on the bitter side, but why I have 0 allergic reactions when I eat it.
